JPEG vs RAW in the Field
Short answer: either works. Long answer: it depends on how you shoot.
Shoot RAW if:
You frequently recover highlights or shadows heavily in post. You shoot in mixed or difficult lighting. You want maximum latitude for colour grading. You don't mind the processing time.
Shoot JPEG if:
You want to share quickly. You have a camera with good in-body film simulations (Fujifilm, especially). You're trying to nail exposure and colour in camera as a discipline. You're on a project where visual consistency matters more than post flexibility.

A raw file is everything the sensor recorded — the full tonal range, white balance still adjustable, nothing baked in. A JPEG is a finished photograph the camera developed for you in a fraction of a second: it applied contrast, colour, sharpening and noise reduction, then threw away the data it did not need to make the file small.
The practical consequence is latitude. A raw file typically holds two to three stops more recoverable detail in the highlights and shadows than the JPEG made from the same exposure. That headroom is invisible until you need it — and on the street, where the light is high-contrast and the exposure is a fast judgement call, you need it more often than in most genres.
Why raw suits the street
Street exposure is a guess made at speed. You are pre-setting from the light or trusting a meter fooled by dark doorways and bright sky. Raw is the safety net: a frame a stop under or over is fully recoverable, where the same miss in JPEG is often gone for good.
High-contrast light is where JPEG breaks first. The classic street scene — a lit figure against deep shadow — pushes tones to both extremes. JPEG clips the highlights to white and crushes the shadows to black with no way back. Raw keeps the detail in both so you decide later where the picture sits.
White balance becomes a choice, not a mistake. Mixed street light — sodium, LED, neon, daylight all in one frame — routinely fools auto white balance. In raw, white balance is a slider you move after the fact with zero quality loss. In JPEG it is baked in.
Your archive stays future-proof. Raw files can be re-developed years later with better software, or reinterpreted as your taste changes. A JPEG is a decision the camera made once, permanently.
When JPEG actually wins
Raw is not automatically the right call. JPEG genuinely wins in several situations.
When the in-camera colour is the point. Fujifilm's film simulations, and the colour science of many modern cameras, produce JPEGs a lot of photographers prefer to their own edits. When speed and volume matter. JPEGs are far smaller, write to the card faster, fill fewer drives and need no development step. For high-volume shooting or fast turnaround, that friction saved is real.
When you will not edit. If a frame is going straight to a phone or a story with no processing, a good JPEG is done and a raw file is just a slower route to the same place.
The honest compromise is raw + JPEG. Most cameras shoot both at once: the JPEG for instant use and the raw as insurance. The only cost is card space, which is cheap. For most street photographers this is the setting that ends the debate.
A practical street workflow
Shoot raw + JPEG if your card and buffer allow it. You get the camera's finished look immediately and keep the full file for the frames worth developing.
Cull on the JPEGs, develop the keepers from raw. You do not need to process 300 frames. Sort quickly on the small, fast JPEGs, then take only the handful that matter into raw development.
Set a sensible baseline in-camera anyway. Even shooting raw, set your white balance and picture profile thoughtfully — it makes the JPEG preview and your starting point better, and a good preview helps you judge exposure on the street.
Expose for the highlights. Whichever format, protect the bright detail: it is the tone that cannot be recovered once clipped. Raw gives you room in the shadows to lift; blown highlights stay blown. Should I shoot RAW or JPEG for street photography?
For most photographers, raw — or raw + JPEG together. Street light is high-contrast and exposure is a fast guess, so raw's extra recovery latitude saves frames a JPEG would lose. Shoot JPEG when the in-camera colour (like Fujifilm film simulations) is your finished look, or when speed and volume matter more than latitude.
What is the difference between RAW and JPEG?
A raw file is all the data the sensor captured, with contrast, colour and white balance still adjustable. A JPEG is a finished image the camera processed and compressed, discarding data to save space. Raw holds roughly two to three more stops of recoverable highlight and shadow detail.
Does RAW matter if I use Fujifilm film simulations?
It depends on your goal. If the simulation is your finished look, the JPEG is exactly what you want. Shooting raw + JPEG gives you both — the simulation straight away and the raw as insurance for frames where the exposure or white balance needs rescuing.
Is RAW better in low light?
Generally yes. Raw retains more shadow detail and lets you apply noise reduction and white balance after the fact, which matters under mixed artificial light. The JPEG bakes in the camera's noise reduction, which can smear fine detail you might have preserved from raw.
Will shooting RAW slow me down on the street?
A little, and mostly afterwards. Raw files are larger, so the buffer fills sooner in long bursts and development takes a processing step. Cull on the JPEGs and develop only the keepers, and the extra time is minimal for the safety it buys.
